Ingredients
· 1 bunch Hakurei turnips (about 6–8), greens removed and saved if fresh
· 2 tbsp butter
· 1 tbsp olive oil
· 1 tsp sea salt
· 1/2 tsp black pepper
· 1 tsp honey (optional)
· 1 tbsp fresh thyme or parsley
· 1 tsp lemon juice
Instructions
1. Wash turnips well. Halve larger ones; leave small ones whole.
2. Toss with olive oil, salt, and pepper. Roast at 425°F for 20–25 minutes, turning once, until golden and tender.
3. In a skillet, melt butter over medium heat until golden and nutty smelling (about 2–3 minutes).
4. Add roasted turnips to the pan. Toss with brown butter, honey (optional), herbs, and lemon juice.
5. Serve warm as a side dish with chicken, fish, steak, or grain bowls.
Bonus: Use the Greens
If the greens are fresh, sauté them with garlic and olive oil for 2–3 minutes and serve alongside.
